This is not pizza, by a long shot. This is a whole wheat pastry apple galette, made with 3 different apples and delicately baked in a woodfired oven.
The evening goes by something like this... in the woodfire oven prepare some appetizers, then a pizza or two to nibble on - just to keep the guest happy. Then cook your veggies, and roast your main course (fish, meat, etc.). While the meat is resting before you serve, pop in the apple galette and let it cook for 20-25 minutes. It will cool as you have your meal and be ready for you when you serve coffee. (Please don't forget to invite me!)
