This clever little machine allows you to feed it ribbons of dough, and as you crank the handle, it produces delicate dumplings of pasta, resembling gnocchi. It's really easy to do, and fun for kids to help.
We find that if you hold a little tension on the dough as it feeds the machine, the cavatelli come out better formed.

How to make Gnocchi from baked potatoes.
Gnocchi are one of my favorite pasta - it's a favorite of my kids as well. Natalia loves them, and she is an excellent gnocchi roller!
Together, we demonstrate how our family makes gnocchi. Gnocchi, can be made from boiled or baked potatoes - some have egg, some do not. We use baked potatoes, a little flour, nutmeg, salt, and egg yolks.
