#4125 Stainless Steel Paella Pan $27.00
Paella pans are the preferred vessel to cook and roast food in woodfired ovens.
Our stainless steel pan is light-weight, with great heat transferring qualities. Use for paella (of coarse), but can be used for so much more...
Roasted potatoes, vegetables, meats, sauces, shellfish, etc. Get creative and fill with a 1" layer of Rock Salt- and make Frankie G's Clam Casino appetizer for your guests.
Using this paella pan is more durable than using ceramic and Pyrex cookware. (I never liked putting glass material in the oven with the fear of it breaking and leaving glass chips for my next pizza...). Although I love to cook with cast iron, this pan is lighter in weight and transfers heat from your oven floor better. The handles also allow it to be maneuvered much easier within and outside the oven.
If you would like to see this pan in action, check out our
FG Video page.

This is a great way for home pizza makers to ferment and retard their dough. East-Coast style pizzerias have been using them for years, and guess what, it works great for home application too!
Pizza dough is best with a long, slow, cold rise - It's best for the flavor development of your dough. These pans chill quickly and keep your dough at a consistent temperature.

I like to put the pie right on the hearth of the brick oven. But when we make pizza indoors, we'll make pizza skins ahead of time and place the skins on these screens.
Using screens allow one to easily maneuver uncooked pizzas throughout the kitchen and into the oven with ease.
Also, if the hearth is too hot, use a screen to start baking your pie, then remove the pizza from the screen and let it finish on the hearth.
Timpano. What is it? It is the grand pasta drum filled with goodies, made famous by the movie Big Night, (written by Stanley Tucci and Joseph Tropiano - Directed by Stanley Tucci and Campbell Scott)
It is a great movie - especially for those who love Italian cooking and... Italians! if you have never seen it, you should... and if you have never made Timpano... you DEFINITELY SHOULD!
While this may be considered a labor-intensive dish, if treated right, it becomes a wonderful event for your family and friends! Share the preparation experience with your guests - have one prepare the sauce, another can bring the cheese or salami, you supply the meatballs... and ... have a fun time creating the Timpano together (as Natalia and I did for our family in the video above). We also have pictures on our FGpizza facebook page where we made 16 large Timpano for St. Francis Solano School, Sonoma, Ca.
The bowl diameter is 14" and stands 4 5/8" tall. The reason this type of bowl is used is because the shape is perfect, and the enamel coating cooks the pasta crust perfectly. Our Timpano bowls are created by baking porcelain-enamel onto the surface of a high-quality steel bowl. It meets both FDA as well as California Food Safety regulations. This is a great item.
Each Timpano bowl comes with the recipe for "Timpano alla Big Night", and cleaning instructions. Color design of bowl may vary.

They are approved by the Forest Stewardship Council (fsc.org), and NSF approved. They are dishwasher safe, can withstand temperatures of 350 degrees, and its surface will not dull your knifes. (now that's pretty cool)
What more can we offer?

Frankie G's note: I would not cut my pizza on anything else. This is the perfect cutting board and perfect pizza vehicle from oven to guest . With its beveled front edge, one could even use this peel to scoop a finished pizza off it's baking stone! It's very cool.

#4166 German ROUND-Proofing Basket $20.00
Hand-made in Germany, these baskets are a newly found treasure for us. They were made especially for FG pizza & Italian, and beaming with quality.
The baskets are very nice, white in color, sturdy and firm construction, and traditionally shaped.
The GREAT feature about these baskets are their shape! The are wider at the mouth, than they are at the bottom. This allows full development during rise, better adhesion of flour to dough, and the shape make it much easier to pop the dough out of the form.
The measurements are: 10.5" round at open top, 5” wide at bottom, 3" high.
These German-made, bread-proofing baskets are labeled many names: Benneton, brotform, brotformen, willow baskets, cane baskets and coil baskets to mention a few. What ever you want to call them, you can't beat the QUALITY or the PRICE that we are offering.
For those who have never used these, proofing your bread in these baskets allow one to retain a beautiful artisan flour design on your loaves when finished.
Dust the baskets with flour, (I use semolina) your bread proofs sitting inside these brotforms inside these brotforms. When it's time to bake, invert the basket on your peel and transfer the bread, the dusting of flour is now left on the unbaked bread in a spiral design, typical of European bakers.
The final result is the mark of a true artisan baker.
