Timpano. What is it? It is the grand pasta drum filled with goodies, made famous by the movie Big Night, (written by Stanley Tucci and Joseph Tropiano - Directed by Stanley Tucci and Campbell Scott)
It is a great movie - especially for those who love Italian cooking and... Italians! if you have never seen it, you should... and if you have never made Timpano... you DEFINITELY SHOULD!
While this may be considered a labor-intensive dish, if treated right, it becomes a wonderful event for your family and friends! Share the preparation experience with your guests - have one prepare the sauce, another can bring the cheese or salami, you supply the meatballs... and ... have a fun time creating the Timpano together (as Natalia and I did for our family in the video above). This is the classic wooden ravioli rolling pin just like the one my grandmother used to use, and I still use today. it makes nice small squares of ravioli.
The process goes like this:
One rolls out a sheet of dough, spreads filling on the right half of the pasta, then folds the left half of the dough over the filling to sandwich the filling.
To make ravioli, dust the filled-pasta sheet liberally and roll with rolling pin. THAT’S IT!
Rolling pockets will make ravioli cuts of 1.5" x 1". With 4 rows of 10 ravioli pockets per row. The barrel is 10.25" long and 2” in diameter, plus the handles. Overall size of the ravioli rolling pin is 16.75"
