We offer a four-hour class for (two people) that teaches and coaches you on everything that you will need to plan and deliver a successful pizza party.
This consultation focuses on scratch-made pizza from a woodfired oven. It’s only right that we start our day with understanding the oven, fire, and managing both. Discussion on wood and oven firing will be our first demonstration. Frankie G will personally coach you on how best to fire and prepare your oven for pizza, resulting in a clean hot oven with the proper fire and flame. The oven will heat during the consultation and you will learn to manage the fire and cook pizza correctly in the oven in the last hour of the day.
While the oven is firing away, we will have a dough making session. This is very hands-on as you will receive an understanding of the characteristics of different flours, water, and how sugars, and fats affect the final product. Using and discussing the bakers percentage method, we will mix, ferment, portion and shape dough into dough balls. Frankie G will supply dough to be cooked this day, as the dough you make in class can be used 2-days later.
Next, we venture into sauces and pizza topping preparation. Based on your pizza selections, we will discuss and prepare pizza sauce(s) together – learning about how raw ingredients affect the final result in performance and taste. Cheeses and toppings to be used in the pizzas will be prepped together in the client’s kitchen. You’ll receive advice and instruction on how best to prepare cheeses, meats, vegetables, etc., correctly - for a successful pizza-making event.
With your oven, dough, sauces and toppings ready it's time to discuss "mise en place" (The French cooking term for "mess in place"). You'll learn how to organize your cooking area so that your event can be fun as well as productive. There will also be a discussion on how to keep your food fresh and safe for eating during a pizza party.
Now we get to the real fun stuff. PIZZA! Here we offer a hands-on class on how to shape dough balls into pizza skins, apply toppings correctly, and finally cooking the pizza to perfection in your woodfired oven. We will make one traditional Margherita pizza, and three other pizzas of your choice (previously discussed).
We will end our day with a Q&A, and toast to celebrate your accomplishments!
